Red, White & Bean Minestrone

Try this delicious soup on a cold day:

Red, White & Bean Minestrone

1 T olive oil
1 cup Turkey Italian Sausage cooked & cut into small pieces
2 T tomato paste
1 cup chopped onion
1 c chopped celery
1 T minced garlic
1 c chopped carrots
1 t oregano
1 16 oz can diced tomatoes
5 cups chicken stock
1 can Bush's cannelloni beans with liquid
1 can kidney beans, drained
2 cups chopped zucchini
2 cups baby spinach
1 cup bow tie pasta (cooked)

Heat olive oil, brown sausage, add tomato paste, cook until brown. Add onions, celery, garlic, carrots and oregano. Pour in slow cooker and add tomatoes and chicken stock. Cook for 6 - 7 hours on low. Stir in remaining ingredients and cook on high for 10 minutes.

My daughter had cut up and measured all the vegetables last night, so this morning everything could quickly be put together to simmer all day in the crock pot. We forgot to get out the container of spinach so that's why you don't see it in the crock pot picture. With all the other flavors, we never missed the spinach but will add it next time.
This is delicious and very filling. Looking forward to taking some to work tomorrow for lunch.
