White Chicken Chili








Got this recipe off of the Eat Better America website ( http://www.eatbetteramerica.com/ ). It was very flavorful and easy to make in about 45 minutes. It called for ground chicken but my grocery store did not have any so I boiled two skinless chicken breast and chopped them up instead. I also used great northern beans because my store did not have the cannellini beans either !
1 lb ground chicken
1 medium onion chopped
2 t finely chopped garlic
3 cups chicken broth
1.5 t oregano
1 t cumin
1/4 t red pepper flakes
2 medium chopped zucchini
2 cans cannellini or great northern beans drained and rinsed
1 small can chopped green chilies
1/2 c shredded reduced fat monteray jack cheese
Cook ground chicken, onions and garlic until chicken is no longer pink. (I sauteed the onions and garlic in olive oil first). Stir in all remaining ingredients except cheese. Heat to a boil, cover and simmer until zucchini is tender. Remove from heat, stir in cheese until melted.
