Chicken & Stuffing Casserole


I did lots of cooking last week for Aaron's birthday lunch.
Here is the recipe for Chicken Stuffing Casserole.
Ingredients needed are:
One box chicken stuffing
1/2 cup butter
1 cup water
boiled chicken breast (cut into cubes)
1/2 cup chopped onion
1/4 cup green pepper
3/4 cup mayonnaise
2 eggs
1 1/2 cups milk
1 can cream of mushroom soup
1 can water using the soup can
4 oz mozzarella cheese, shredded
Oven temp is 350 and baking time is 50 minutes
FIRST LAYER:
One box chicken stuffing mix, 1/2 c butter and 1 cup water. Mix all together, bring to a boil, cover with lid, remove from stove top and let sit for 5 minutes. After it is ready, spread 1/2 of it in a 9 X 13 pan.
SECOND LAYER:
2 1/2 cups cooked chicken, 3/4 cup mayo, 1/2 c onion and 1/4 c green pepper. Mix all together and spread over the the stuffing mix.




Next, spread the remaining half of the chicken stuffing over the second layer. Then,
pour the egg and milk mixture over the stuffing.
THIRD LAYER:
Mix the 1 can cream of mushroom soup, 1 can of water using the soup can and 1 cup or 4 oz of mozzarella cheese. Pour this into the casserole dish.
Bake in the oven for 50 minutes. I always use more cheese than it calls for.

I was running short on time and forgot to get a picture of it when it came out of the oven, but it was delicious and everyone loved it ! ! !
