Spinach Cilantro Mexican Layer Dish

I made a spinach, cilantro mexican layer dish today that turned out really good.  Ingredients are as follows:
Fresh spinach
Fresh cilantro
Coarse sea salt and coarse black pepper
Green onions
Salsa
Corn tortillas
Cheese of your choice
Pinto beans

Pre-heat oven to 425 degrees. I used a blender to chop everything in.  Chop finely one cup of cilantro and four green onions with the salt and pepper.........move to a bowl
Chop up as much spinach as you desire.  I used approximately 1/2 of a 10 oz bag......
I probably should have used the entire bag, but my little blender was not doing too good of a job and making a big mess....transfer chopped spinach to bowl with cilantro and onions and mix it all together.
Layer some corn tortillas in a baking dish.  Spread 1/2 of the cilantro/spinach/onion mixture on top.  Next spread 1/2 of the pinto beans, some salsa and some cheese.  I used my homemade salsa.  (My salsa consist of poblano peppers, jalapeno peppers, red onion, stewed tomatoes and tomatillo.)

Repeat the layers again in any order that you like and finish it with a thick layer of cheese....

Cover with foil and bake for 25 minutes.  Then remove foil and bake for an additional 20 minutes until it is golden and crusty!
I served it with additional homemade salsa, sour cream and avocado....
I will definitely be making this again.  It's a keeper of a recipe!  Scroll down to see who all I have linked to this week............
