Chicken Rice Avocado Salad

If you are craving a rice dish with lots of flavor, this is one to try.  Katie's friend, Christy made this for a baby shower a few weeks ago and we decided it was a keeper of a recipe.  You will need the following:
1 boil in the bag instant white rice
1 de-boned and chopped rotisserie chicken
2 avocados, seeded and chopped
1/2 of a large vidalia onion
some cilantro or parsley (I used cilantro)
1 cup mayonnaise
Seasoned pepper
Cook the rice, chop the chicken, cilantro, onion and avocado.  Coat the avocado in lime juice to prevent browning.  Mix the seasoned pepper into the mayonnaise.
Combine it all together and serve on bread or toast.  Or do I like did and eat it right out of the bowl !!!!
