Chicken Chili Mole Tacos
















New recipe we tried tonight: Chicken Chili Mole Tacos. This recipe is unusual in that it has unsweetened cocoa, sugar and cinnamon in it ! ! ! It was very good with only a slight hint of the cocoa and cinnamon. Pictures are above, they are not the most appetizing of photos, but it was good and we'll have it again. For everyone who knows me well, if it says "tacos" in the name, I'm always willing to try it !
1 t canola oil
1 large onion, chopped
2 garlic cloves, minced
1 T unsweetened cocoa powder
1 t ground cumin
1/2 t cinnamon
1/2 t salt
1/2 t sugar
1/2 t dried oregano
1 15 oz can diced tomatoes
1 15 oz can pinto beans, rinsed and drained
1 c chopped cooked chicken
8 taco shells
2 c shredded romaine lettuce
1/2 c shredded reduced fat cheddar cheese
Heat oil in skillet over medium heat, add onion and garlic, cook until golden, about 7 minutes. Add cocoa powder, chili powder, cumin, cinnamon, salt, sugar, and oregano; cook, stirring constantly, until fragrant, about 1 minute.
Add tomatoes, bring to a boil. Reduce heat and simmer, stir occasionally, until flavors are blended, about 8 minutes.
Stir in beans and chicken, cook 3 minutes.
Spoon about 1/3 cup of the chili into each of the taco shells.
We served with homemade salsa and fat free sour cream.
2 tacos with 1/2 c lettuce and 2 T cheese has a Weight Watchers point value of 8

  1. I remember seeing this recipe and wondering about it! And I can't tell you how many times I've picked up the mole jar in the store too. I'm glad you tried this and thanks for posting about it. I love tacos too!
