Romaine Salad with Grapes

This is my new favorite salad and third time to make since Christmas. It is simple to make but does take a little prep time. The recipe calls for brocolli, but I forgot to buy it. It tastes just as good without it ! ! ! !


Ingredients are:
Romaine lettuce
red grapes
brocolli
green onions
1 package ramen noodles (discard the seasoning pack)
1 small package chopped pecans or walnuts
For the dressing:
1/2 cup sugar or Splenda
1/2 c salad oil or olive oil
1/4 c red wine vinegar
dash of soy sauce
salt and pepper
Preheat oven to 350 degrees. Breakup the "block" of ramen noodles into small pieces. Spread out on a cookie sheet, sprinkle chopped nuts on top. Bake for 5 minutes to toast the noodles and nuts.
Chop up all the vegetables and grapes. Mix the toasted noodles and nuts in to the salad. Add the dressing and its ready to eat ! ! !

While I was chopping up the grapes, one fell on the floor. Riley my "little vacuum cleaner" dog was quick to snatch it up and toss it around the room for a few minutes before eating it.
