Peanut Butter Sheet Cake

Aaron's birthday cake this year was Peanut Butter Sheet Cake. This was my first time to make it and it was so good. We were all in the kitchen nibbling on it for two days.

Ingredients are as follows:

2 cups all purpose flour
2 cups sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup water
3/4 cup butter
1/2 cup chunky peanut butter (reduced fat does not work well, use the real thing)
1/4 cup vegetable oil
2 eggs
1/2 cup buttermilk
1 teaspoon vanilla extract

Glaze:
2/3 cup sugar
1/3 cup evaporated milk
1 tablespoon butter
1/3 cup chunky peanut butter
1/3 cup miniature marshmallows
1/2 teaspoon vanilla extract


In a large bowl, combine the flour, sugar, baking soda and salt. Set this bowl aside.

In a small pan, bring water and butter to a boil then stir in the peanut butter and oil until it is blended.

Next add the dry ingredients and mix well.

Combine the eggs, buttermilk and vanilla and add to the peanut butter mixture. Mix well.

Pour into a 15" X 10" X 1" pan that has been sprayed with Pam. Bake at 350 degrees for approx 20 minutes or until a toothpick inserted in the middle comes out clean.

While the cake is in the oven, get the icing ready to pour over the cake as soon as it comes out of the oven.

Icing:

Combine the sugar, milk and butter in pan. Bring to a boil and stir constantly for 2 minutes. Remove from the stove, stir in the peanut butter, marshmallows and the vanilla extract until the marshmallows are melted. Spread this over the cake when it comes out of the oven. This will be a thin layer of icing. You will need to double the icing recipe if you want a lot of icing on it.


Like I said early, this was so good, we could not stay away from it ! !
