This crock pot chicken stew turned out really good for this cold, cold day in the Midwest one week before Christmas.
Ingredients are:
boneless skinless chicken breast
2 cans chicken broth
small red potatoes
chopped onion
chopped carrots
1 t paprika
black pepper
1 small can tomato paste
1/3 c cold water
3 T cornstarch
I was really lazy this morning so I threw this all in the crock pot with very little prep work. I poured in the chicken broth, put the chicken breast in whole then tossed the potatoes in whole, tossed the carrots in whole and cut the onion into two large chunks. I then mixed the tomato paste with a little water and stirred the paprika and black pepper into that. Turned the crock pot up to high and left it alone for five hours. Then i mixed the cornstarch into the cold water with my hand whisk and then mixed that into the crock pot fixins'. Put the lid back on and left it alone for another hour and half. Then it was done!
The chicken and vegetables were so tender they broke apart with a fork. It was yummy, healthy and super easy!!!
