Tomatillo Guacamole Salsa

Tomatillo Guacamole Salsa..........I made this to go with a flank steak I cooked in the crock pot yesterday.  And yes, it does taste as good as it looks!  Click here to read about the flank steak.
What you need:
Tomatillos, I used about 1 pound of them
1 avocado
1/3 to 1/2 of a cilantro bunch
1 jalapeno
Approximately 1/3 of an onion
Peel the paper shells off the tomatillos and wash the sticky off of them....

Quarter the tomatillos, slice the jalapeno and onion and chop up the cilantro...

Puree it all in your blender to your liking....I have a little blender, so I had to keep emptying it into a larger bowl.

Scoop the avocado out of it's skin and remove the seed.....

Puree it and add to other ingredients.  Run it all back through the blender to mix everything well.  If you have a large blender you can do it all at once.

Next time I will add some garlic.  You might want to add some salt.  I try to avoid adding salt in my recipes.

It thickens up after being in the fridge for a while.

  3. I made this as a salad dressing for a ladies lunch - everyone loved it. I did add 2 garlic cloves and 1/2 teaspoon salt.
