Chicken Fajitas with homemade salsa

Chicken fajitas are easy. Stir fry the peppers and onions in olive oil until they are caramelized. Remove from heat, I put them in a bowl and sit them inside the microwave so they stay warm. Add the chicken to the skillet and stir fry it until golden or no longer pink in the middle. I buy the skinless chicken tenders to save time.

We like homemade salsa, fat free sour cream and shredded cheddar cheese with our fajitas ! ! We also use Mission's low carb tortillas.


I make homemade salsa all the time. I like the freshness and the taste much better than store bought (even Pace Picante ! ). I use canned stewed tomatoes, pablano peppers, jalapeno peppers, tomatillos, garlic, onions, red pepper flakes and cumin. Sometimes I'll add some lime juice and some cilantro.


I don't use any measurements, just start adding it all together and see what happens....

  1. That looks SOOOOOOOO good!!! I love fajitas, but my husband, do you know he'll pick out all the protein and leave behind all the veggies!!! All he wants is the meat.
