Tater Tot Casserole

Tater Tot Casserole falls under the comfort food list with me. There is nothing healthy about it but it tastes so good!

Ingredients are:

1 lb ground beef
1 can cream of chicken soup
1 can cream of mushroom soup
8 oz sour cream
1/3 c red onion
2 c shredded cheddar cheese
dash of salt and pepper
28 oz bag of tater tots.

The key to great tater tot casserole is to plan ahead with your taters. I take them out of the freezer at least 24 hours ahead of time and move them to the refrigerator to completely thaw out.

Brown beef, drain and rinse. Combine beef, chicken soup, mushroom soup, onion, 1/2 the cheese, sour cream, salt and pepper. Add 3/4 of the tater tots. Pour into 9 X 13 dish and top with remaining tots. Bake at 350 degree oven for 35 minutes. Add cheese and bake another 5 minutes.
