Here are the ingredients:
1 small onion
Olive oil
3 c cooked chicken
1 can cream of chicken
1 8 oz sour cream
1 4 oz diced green chilies
1 can mild rotel
salt and pepper if you like (I omit)
Flour tortillas
2 more cans of cream of chicken
2 c grated cheese of your choice (we like colby/jack blend)
2/3 c milk
Saute the onions and chilies for a while then add in the chicken....
add in one can of cream of chicken and the sour cream.....
next add however much of the rotel you like....
let it heat up and then spoon it into the tortillas and place in baking dish of your choice...
in a bowl, add the cheese (save a little for right before removing dish from oven), the two cans of cream of chicken and the milk..........
you may have to add more milk to get it at a soupy texture (i usually do). spoon it over the stuffed tortillas............
total baking time is 35 minutes. at 30 minutes, sprinkle on some more cheese!
and this is how it looks when it comes out of the oven!......
Also at our house, we only eat homemade salsa. This salsa gets rave reviews too.....
Poblano pepper
Red onion
Tomatillo
Jalapeno
Stewed tomatoes
Chop up the veggies and run everything thru the blender however you like it !
We like it to be a little chunky.....
Spoon some enchiladas in a bowl (or plate), toss in some homemade salsa and go for it! It's delish !!!!!
I had to get this cookbook documented on my blog. It is well loved, well used and has served as a very good spoon rest as well!
